1. Can you put some light, how HRH Group proved its Excellency and succeeded in grabbing the award.

HRH Group of Hotels with its dedicated team of I.T. worked hard and develops solution in-house for various verticals of industry. The innovation is based on need of industry and a driving force towards creating better presence in respective markets to serve. With the vision of our Chairman Shiriji Arvind Singh ji Mewar , we always focused on understanding critical aspect of Businesses and its pain area then should fix it using technology solutions as a key drivers.

CIO Asia 100 is a very big platform where more than 15 countries compete to be listed in 100’s index. We submitted our case study of integrated solution of eCRM (Customer Relationship Management), CRS (Central Reservation System) and Revenue Information System. It found innovative and having sense of strategic value to the jury especially in hospitality industry cope up with Global standard work flow practices.

 

2. Sir, what was your first reaction after hearing about the award?

When I got email from the editor announcing the news and inviting us for the award ceremony I was excited … ‘Yes it’s done what is next now!!’.

 

3. How companies and institutions of Udaipur got the nomination for this award. How many other companies also nominated from Udaipur?

I don’t have information of other Organizations nominated from Udaipur however in winner list there were 5 more winners from India including big brands like L&T Infotech, ICICI Securities, HDFC Bank.

 

4. What would be the after effect of grabbing this award to Udaipur IT Sector?

Udaipur becoming the hub of education producing talented people in profession like engineering, management and medical. The award creates a space at Global platforms and breaks the myth that small cities (other than metros) cannot do something noticeable and unique at Global platforms. It would be a big motivation and encouragement to I.T. professionals in and around Udaipur.

 

5. One main big reason which put the award in HRH’s lap.

Focused industry specific approach where the Business and leadership ‘think less I.T. think more Business’ with a zeal for IT and business alignment. We believe in 1+1 = 11 the synergy among the team members.

 

6. What are your further plans after receiving this recognition?

We have a plan to diversify our foray into software services to outside world specially to serve Hospitality, Leisure, Travel, Tourism & education industries for their different need of process automation and achieving greater agility to the businesses. The various domains may cover HMS (Hotel Management System), eCRS (Central Reservations system), eCRM & SalesForce automation, HRIS (Human Resources Information Sys), MMS (Material Management System)  & SMS (School Management System). Industry really needs high quality and domain specific agile solutions which should support business and align technology with business objective as the Global economy opens up doors for many more market to serve.

7. Could you elaborate some threats and challenges for successfully establishing and running the IT department of HRH?

Challenges are there as far as visibility to global markets are concerned towards competing for the opportunities available. Moreover the challenges are lack of Infrastructure facilities to the cities like ours, penetrations/access to new technology, training and retaining quality man power.

8. Any message for the youth of Udaipur for becoming a successful IT Professional.

Think out of the box. Your first innovation should encourage you for next it’s a continue process don’t stop yourself anywhere. Udaipur being a small city as compare to metro you have more time to devote for quality work since less time required for commuting. Take advantage of good environment which is less polluted, make likeminded groups, participate in bigger forums at least once in a year, speak, write and let world listen to you. Consider that you can and have approach to Global platforms. Dream for it, strive for it and make it happen.

Sneezing Social Liberty – Is Another Crime

Today a big social cum political debate came to a halt when the Government had stamped the decision to keep the consent for maintaining sexual relationship to 18 years instead of 16. People and other social activists & groups have sighed in relief after the decision had rolled over. Government was facing strong opposition from the all the corners for relaxing the age limit to 16 years. And obviously it is contradicting where at one side we have established the age limit 18 for marriage and granting 16 as a valid age to have a physical relationship. It seemed that certain political partied were intended to promote pre marital relationship in the country. Anyway, with strong protest after promulgating the ordinance has brought positive results.

The bill has certain other clauses which are termed as offence and the culprit if found guilty could be punished. Even one hasn’t touched a girl but staring and stalking may put him under question mark. Yes, government has made certain amendments for the act of stalking and voyeurism. Certain riders have been added to prevent the misuse of the law.

This is what is happening in the country’s capital. Let us have a glance at our city too and investigate the things happening at Udaipur. We cannot disclaim that our city is neat and clean. Mischievous activities also happen in our city and at times someone from us is involved. We are not talking about the activities such as indulging in a stringent crime. At times wee wickedness proves enough to harass someone’s social and psychological life.

Have we ever been into deep and given a serious thought that what adverse effect it lefts on a girl’s social life when someone in a group, trying to prove his superiority of his bursting manhood, make nuisance or pass an irritating comment. When we roam in groups, we no more remain a complete social etiquette personality. It is not a flaw but a general human tendency to commit such small social crime inadvertently. On contrary at the other hand, the girl who has just stepped out with her colleagues or family members has nothing to do except ignoring such unsophisticated gestures one is making over her.

Such activity either not reported to parents most of the times and when reported then they are the only one to face the consequence in the shape of their cut down liberty. In case where family members become the witness would try to avoid moving out or going at a particular place. So at the end who faces the consequence, it is the person who has been the victim and not the culprit. Person doing would hardly realize the degree of crime he has committed. He won’t even know whether he has really slaughtered one’s adolescent emotions. Thus one’s innocence puts someone’s social and personal liberty at stake.

Looking, admitting and admiring someone’s beauty is not harm. Men are built with the basic instinct to get allured towards glamour. When the instinct exaggerates and turns into fervor and men starts showing the sign of animalism; that is the stage when the nascent of a crime evolve. These symptoms reveal that one is mentally sick.

It is not possible to change the whole society. Society is not a person who could be conquered by arguing with thoughts of another person. A society is made up of all of us. If one of us try to behold the firm commitment that he would not showcase his inadequate behavior at public places, believe me your teammates would also respect you. And if you find a flaw in your friend you may stand in front of him as an example. Not today but tomorrow your strong determination would bring fruitful result.

Women deserve respect and she should not be treated as a sheer substance that would always afford to impart joy in one’s feeble nervous system. This is one of the main reasons that the percentage of women participating in growth of Indian economy is far less than other developed and developing countries. India stands fourth or fifth rank in the world where women is termed unsafe (according to an article by renown management guru). If we really wish to change the face of India on the world economic map, we all would be required to put our contribution by respecting women.

The institute is organizing the annual cultural fest Fe’stezar-2013 that would be celebrated from 16th March 2013 to 18th March 2013. The fest would be a fusion of creativity, knowledge and entertainment.

Variety of cultural activities would be observed during the fest in the institute. A horde of students from different colleges would also participate to showcase their talent. Local Transport System in Udaipur

You might have a good looking sporting bike or a stylish car or some other luxury vehicle to roam in the city. You would feel delighted to be a proud owner of a vehicle and your own means of local transport. And of course you should be because it saves lot of energy and precious time to travel here and there, except the fact that travelling on your own vehicle costs you a little more and put some load on your pocket. In comparison to the time saved this cost seems to have been compensated against your valuable time.

What in case if you ought to travel through public transport apart from a private cab or auto? If you have ever traveled in Jaipur, Delhi or Kolkata you might find the experience somewhat pleasant or satisfactory. Although all means of transport are crowded, but what makes them different. What is there in the public transport of Udaipur? Jaipur has a sophisticated network of low floor buses. Delhi has got CNG buses, autos and moreover Delhi Metro is the best option to travel in Delhi. Metro never faces things like traffic jams or traffic signals. It is fast and effective medium of transport. Kolkata has got underground metro and trams. Even in Jaipur the first route of metro would get operational by the end of year 2013 or in the beginning of 2014.

Although Udaipur is a very small city and its comparison to cities like Delhi or Jaipur is not worth talking about. But looking at the population of the city and the density of vehicle per square kilometers is on higher side. Even the worst part of it is its poor local transport system. The only available local transport at Udaipur is three wheeler tempo or vikram. There are over thousands of such vikrams running around the streets of the city and all run on diesel. These vikram or tempo is among the most polluting vehicles. The level of air pollution is on constant rise in Udaipur. Our city has always remained in lime light as the world’s best tourist destination. The mark of such level of pollution would seldom make it a world class heritage city. Similar is the problem with our lakes. From past few years we have been blessed with plenty of water but the level of pollution proves a blotch on its beauty.

This is the right moment to intervene and understand the sensitivity of the issue. An improvement in the transport system is the next major necessity of our town. Local buses are nowhere seen running. The places where buses could not be operated may have CNG operated small vehicles or the next generation battery operated vehicles instead. Before that Udaipur need to be equipped with CNG pumps. The PUC certificate could be made compulsory so that the private vehicle owners could also keep a regular watch on their vehicle’s emission level.

If there would be proper means of local transport like busses it would bring many benefits together like less pollution. Hundreds of buses would pollute less than the thousands of three wheelers. Buses would be safer than the three wheelers and it would also be able to carry more number of passengers at one go.

The journey is long to go. Such a big change could not be attained at a blink of an eye. We need to spend some quality time and start giving a thought. Awareness needs to be generated among the mass. Then in the coming year we would see the fire coming out of the spark that we would ignite today. This is all for our well being and for betterment of our own city UDAIPUR.

Udaipur Nagar Nigam and its Benefits

Udaipur – Now a Municipal Corporation

You might remember we had shared hopes for our Udaipur city at the beginning of this New Year 2013. Amongst them one was to convert the existing City Council into the Municipal Corporation. The Honorable Chief Minister of Rajasthan, Mr. Ashok Gehlot has showered the most awaited gift to the citizens of Udaipur while presenting the Annual Budget 2013-2014 for Rajasthan in the Legislative Assembly on Wednesday, 06 March 2013. A wave of bliss has rippled across every face in the city. People have welcomed whole heartedly the declaration and expressed their glee among each other.

The grant of Municipal Corporation has delighted the people of Udaipur. Although a long awaited decision has been finally made which has pleased everyone here at Udaipur. People and other social groups in the city celebrated joy by carrying firework and distributing sweets.

Of course it is right of every individual of belonging to the city to know the revolution it would bring after having the status of the Municipal Corporation. How the developments would take place and what other facilities would be introduced by having such a remarkable change. Let us summarize them all.

 

Development of Villages

The sphere of the Municipal Corporation would include many adjacent villages. Administrative and Development that were earlier taken care by the Gram Panchayats now would be executed under the powers of Municipal Corporation. Many new wards would be formed and people would get chance to become Councilor for their ward. Villages would prosper and flourish but in the limelight of MC.

 

Development of City on a Wider Scale

Formation of Udaipur Municipal Corporation would lead to open doorways for new big projects and that would certainly bring development on a larger scale. More developments & more projects would offer new employment opportunities to the residents of Udaipur and adjoining villages.

 

Enhanced Administrative Powers

The Administrative Framework would be revived. The Chairman would become Mayor of the city with improved administrative, decisive and financial powers. A C.E.O. of gazette officer rank would be appointed. Instead of one Commissioner there could be two Commissioners who would be working under the C.E.O. The pay structure and other emoluments of the Corporation’s employees would be revised. Thus it would bring cheers on their faces too.

 

Liberty on Financial Front

Municipal Corporation endorses more financial freedom as compared the City Council. Thus this would leverage better development of the City. Earlier the Chairman had power to release budget for Rs. 10 Lac whereas the Mayor can allocate a budget of Rs 1 Crore for the development of the city. Similarly the Commissioner is eligible to allocate Rs 1 Lac whereas C.E.O. has powers to release Rs 75 Lac for the developments projects. So one can imagine the pace of the developments would now take place in our city. Things lying held due to lack of budget would revive and run to touch the finishing line.

 

Better Education System

Inspired by the fast and improved development of the city would attract new universities and colleges to open. This would cater vast opportunities for the students and bring abundant employment openings for the residents. Thus it would certainly strengthen the economy and enlarge the size of Udaipur on a wider spectrum.

Where Technology Is Heading Us

Where Technology is Heading

You have computer at home? You have a laptop? You have a tablet or a smart phone? You have access to internet? Answer to all these questions would be certainly ‘yes’ for majority of us. I own all these things buddy. Owning all this stuff is not my concern of debate over an issue. My intention is not to reveal someone’s status in the society but my concern is something else which is a sensitive issue.

Let me tell you a true short story. I was working as a software developer in a company. Everything was awesome there. The environment, the team everything was good. Everything was comfortable there. After few months we were relocated to another building. The furniture was of different style there, although those were too office chairs. After few weeks I felt some problem in my back. For few days I ignored, but gradually the condition turned horrible. I realized the chair was the main culprit. Although the culprit wasn’t punished rather I had undergone a month long treatment with a physiotherapist. Was that chair only responsible for my ill health?

So what is the moral of the story? We human beings would always pay for our carelessness. I was careless as I ignored my health. With the advancement in technology in this scientific era we have put side all other things and we are paying or would pay in coming future.

We have invented technology for our assistance so that we can save our precious time and could deliver effective productivity. We have increased our productivity but have ruined many other things. And it would cost us too much in many different forms like our environment, our health, our culture and almost every perspective of our life. Let us find out how we are damaging our self and our own planet.

Environment

It is very easy for us to utilize our natural resources, but it is very difficult to get them back in the specified time span. Take an example of deforestation. It takes almost ten years for a plant to become a tree. If we maintain same ratio of forestation and deforestation then a day would come when our forests would remain nowhere on the earth. Should we turn so discriminate to the place where we live and breathe?

I saw in a recent program on TV in which they had locked a person in an air tight glass chamber hardly 10 x 10 x 10 feet i.e. 1000 square feet. What do you guess for how long he could have survived without oxygen? They kept him packed for 48 hours and he survived. And it was not magic. The chamber was having hundreds of plants inside which generated ample oxygen which we have generally in our surroundings. Wake up! We are trapping our self.

Health

We either remain stick to our cell phone, or remain in front of computer for hours. As a result we invite diseases like we had never experienced before. Regular prolonged sitting causes problems like slipped disc, survical. Regular digging our eyes deep on the computer screen weakens our eyesight or may cause migraine. Too much use of keyboard and mouse may lead to wrist pain which is also termed as Carpal Tunnel Syndrome. These are some diseases that are outcome of the advanced technology that have become essential aspect of our daily routine. Excessive use of cell phone is also harmful for all of us especially for children as mobiles emit electromagnetic radiation.

Culture and Language

Use of gadgets, cell phones, and internet is vulnerable for our culture. What you are talking about man? It might seem rubbish but to some extent it is true and we all know that. Barriers and boundaries have been broken, everything is exposed on internet. We call it a modern society, isn’t it a harassment of our culture and cultural values. Our morals are lost somewhere in the technology blowout. Who would control the loss of our moral values? We know where we stand but we wish to remain silent on the issue. Take an example of the language we often use now days over SMS and chat. LOL, HRU, M F9, TC etc. We have developed a new language of acronyms that is sufficient to express our thoughts and emoticons have replaced our facial expressions and emotions. After 15 to 20 years we would harvest a crop of youngsters who would face difficulty to write down a correct syntactical and grammatical sentence. Then we would come across institutes in future teaching ‘Write Correct English’ as we see today ‘Spoken English’.

So, is the new technology managing or deteriorating our life style? Every coin has two sides. Without bad there is nothing good. It is all in our hands how we use our technology. We know very well what we need to do to save our self, our environment, our culture and our planet. We just need to learn the way to use our technology and maintain balance at par in all the aspects which revolve rounds its periphery. Take care, enjoy technology and make it your friend.

संगीत व नृत्य का महाकुम्भ – 51वाँ महाराणा कुम्भा संगीत समारोह

हर वर्ष की भांति महाराणा कुभा संगीत परिषद् द्वारा इस वर्ष 51वाँ वार्षिक महाराणा कुम्भ संगीत समारोह दिनांक 22 फरवरी से आयोजित किया जा रहा है। समारोह का आयोजन नगर परिषद् के सुखाडिया रंगमंच पर किया जाएगा। समारोह का शुभारम्भ 22 फरवरी व समापन 24 फरवरी को होगा। सभी दिन कार्यक्रमों की शुरुआत शाम 7 बजे से होगी। समारोह के दौरान विभिन्न नृत्य व भारतीय शास्त्रीय संगीत के  कार्यक्रम प्रस्तुत किये जायेंगे। हर बार की तरह इस बार भी देश की नामी हस्तियाँ समारोह में शिरकत करेंगी व समारोह की सफलता में चार चाँद लगाएंगी।

महाराणा कुम्भा संगीत परिषद् के मानद सचिव श्री वाय एस कोठारी ने बताया कि परिषद् की स्थापना सन 1962 में की गयी थी। इसका मुख्य उद्देश्य भारतीय संगीत व नृत्य की विरासत को संजोना व इस मंच के द्वारा आम जन को कला, संगीत और नृत्य से जोड़ना है  स्थापना से लेकर आज तक महाराणा कुम्भा संगीत परिषद् में भारत की जानी मानी हस्तियाँ उदयपुर में अपनी प्रस्तुतियां दे कर दर्शकों का मन मोह चुकी हैं। साथ ही परिषद् नए उभरते कलाकारों को इस मंच के माध्यम से आगे बढ़ने का मार्ग प्रशस्त कराता है। नए कलाकारों के लिए यह बहुत उपयोगी साबित हुआ है।

The stage is all set for the mega event PANACHE’ 13 at Sir Padapat Singhania University, Udaipur. Since the inception of the event in 2009 PANACHE is continuously celebrating the hunt for the excellence among the student community.

PANACHE is the student led and student driven initiative which is touching new height and establishing new milestones every year. The primary objective of PANACHE is to showcase the power & talent of youth that touches every dimension of life such as art, culture, social and academic excellence. The event also encapsulates the series of activities that include Conferences, World Meets, Workshops, Technical Competitions, Presentations, Exhibitions and Cultural Activities.

Students of SPSU are continuously working enthusiastically to grow the size of the event year by year and wish to make it Bigger and Better every year. PANACHE wishes to develop student’s interest in all round activities. To keep their interest they also invite celebrity and performers of National & International fame such as Parikrama, Spic Macay, Evergreen and many others.

PANACHE’ 13 is scheduled from 21st February to 23rd February 2013 and wouldinvolve activities of various students of the university. It is been evident that Dr. Benny Prasad who is the most travelled Indian Musician and Instrumental Guitarist would perform in the inaugural night of the festival. Mr. Prasad travels around many countries during the year. He has performed at many grand events like 2004 Olympics Games, 2006 FIFA World Cup and 2007 Military World Games.

Udaipur’s Favorite Road Side Food Stalls [Part 1]

You bath with Park Avenue Soap. Apply Axe deodorant; wear Arrow shirt and Killer jeans. Apply Set Wet gel, wear Ray Ban sun glasses, Adidas shoes and go out to roam in the city with your best friend on your favorite Yamaha R15 bike. Then your friend asks to eat something to quench his hunger. You find out a place and stop your bike at a road side food stall. Just a minute and hold on. From head to toe you are representing an entire shopping mall comprising a series of branded items and to eat; you opt for a road side stall. How come, this is really surprising! Something special is there in the taste that brings you here.

To find out we surveyed some of the popular road side food stalls of Udaipur. Some of them have already become popular and some are on the way to become popular.

 

Bhairunath Tea Stall

Bhairunath Tea Stall is situated at Sukhadia Circle. Before considering anything about his tea I decided to confirm first and I ordered a cup of tea. Who would say no for a cup of tea in winters; provided that it satisfies you. I took a sip and really it was good. It refreshed me thoroughly. The owner of the stall told us that he is running the stall from last 10 years. They run it from 9 am to 8 pm. Although Mr. Bhairu lives in Fateh Nagar but for his business he is residing at Udaipur. A refreshing for only Rs 5 is not a bad deal.

Let us take you towards Sardarpura Road. Beside this road you would find Mr. Shivlal who is running the South Indian food stall from past 8 years. You may find a delicious Masala Dosa in Rs 30/- and Idli (2 Pcs) for Rs 20/- only. It is a good deal to extinguish your hunger for Rs 20/- or 30/-. Mr. Shivlal takes care of hygiene right from the preparation till it is served. South Indian food stall is rare in Udaipur.

The first thing I received as soon as I reached their stall was the menu card. There were 21 items in the menu. I asked whether all of them would be available. In answer he said around 17-18 would be available. It is amazing to have huge no of items at a small road side stall. Mr. Nirbhay Singh the owner of the stall hails from Gogunda and running the stall of Chinese dishes since 5 years outside RMV School Gulab Bagh Road. From Manchurian to Paneer Chilli and Soup is available in the price range of Rs 15/- to 45/-. Most of the visitors to his stall are school and college children.

Everyone is aware of the American Bhutta stall at Bank Tiraha, Bapu Bazar. The stall is being run from last 10 years by the owner Mr. Shankar. From 11 in morning they sell fresh corn and from 5 pm onwards they start selling various preparations made from corn which include boiled corn, sweet corn, cheese corn, corn chaat and raab. Mr. Shankar revealed the fact that the corn sold in Malls generally uses the frozen corn whereas they sell fresh corn only. They use Amool butter for where it is required, means they do not compromise with the health of their customers. You may find Sanwaria Chaat Centre outside TRI office, Ashok Nagar Main Road owned by Mr. Rohit Sahu. You can enjoy spicy and tangy chaat after 5 in the evening. Most of the time he is occupied with lot of customers. The chaat available include Paani Puri made from Semolina (Suji), Aloo Tikki, Bhelpuri and Dahi Puri. They prepare special soup for Paani Puri using Heeng and Jeera (Cumin). Pure Ghee is used for preparing Aloo Tikki. Mr. Sahu belongs to Gangapur Bhilwara and running the stall from 8 years.

 

Bombay Paav Bhaji

At 100 Feet Road Tiraha University Road you may find Bombay Paav Bhaji stall being run by Mr. Nathulal. His Paav Bhaji is really delicious. You may enjoy other items on his stall such as Dabeli and Kashmiri Pulao from 3 pm to 10 pm. He has recently added Kashmiri Pulao in his regular menu. Plain Paav Bhaji would cost you Rs. 30/- and Butter Paav Bhaji Rs 40/-. Mr. Nathulal is working very hard to deserve his space in the hearts of the residents of Udaipur by offering his best and delicious food.

 

Pandit Ji’s Aloo Bade

Every resident of the city must be aware of Mr. Prahalad Sharma aka Pandit Ji who is running the stall of Aloo Bade outside Fateh School opposite Agriculture University. Although it was my first meeting with Pandit Ji. I usually notice a number of customers whenever I pass by from the road and today also the situation was same. He made around 50 Aloo Bade which were all sold out within 3 minutes. Soon he started preparing the next lot. Mr. Sharma is running the stall since 1994. You can enjoy his delicious preparation from 12 to 6 till evening. Mr. Sharma is from Nagda Gujrat.

उदयपुर के रोड साइड फेवरेट फ़ूड स्टाल्स [Part 1]

आप सुबह पार्क एवेन्यू के साबुन से नहाते हैं। एक्स का डियो छिड़कते हैं। एरो की शर्ट व किलर की जीन्स पहनते हैं, बालों में सेट वेट का जेल, आँखों पर रेबेन का चश्मा और पावों में ऐडीडास के जूते पहन कर निकल पड़ते हैं अपनी यामाहा आर 15 पर अपने दोस्त के साथ उदयपुर की सड़को पर तफरी करने के लिए। ठेठ भाषा में तफरी को शायद आप कुछ और भी कहते हैं, खैर रहने दीजिये। कुछ देर बाद आपकी बाईक के पीछे बैठा आपका दोस्त कहता है – यार भूख लगी है कुछ खाते हैं। और आप अपनी मनपसंद डिश खाने के लिए अपनी बाईक सड़क किनारे एक ठेले पर रोक देते हैं। श्रीमान जी ऊपर से नीचे तक आप पूरा शॉपिंग मॉल लेकर चल रहे हैं। जहाँ हर एक ब्रांड आपके पहनावे में झलक रहा है वहां खाने के लिए रोड साइड स्टाल? कुछ समझ नहीं आया। इसका मतलब कुछ तो जादू है उनके स्वाद में जो आप वहां रुक कर खाने के लिए लेश मात्र भी नहीं झिझकते। इसी बात के चलते हमने पड़ताल की उदयपुर के कुछ खास स्टाल्स की और जाना के वे इतने पॉपुलर कैसे हो गए, और हाँ कुछ समय के साथ साथ पॉपुलर हो रहे हैं । आइये उदयपुर शहर के अलग अलग हिस्सों के कुछ रोड साइड स्टाल को ज़रा करीब से जानें।

भैंरूनाथ टी स्टाल

भैंरूनाथ टी स्टाल सुखाडिया सर्किल पर स्थित है। इनकी चाय पर यकीन करने से पहले मैंने एक चाय आर्डर की। सर्दी के मौसम में चाय कौन नहीं पीना पसंद करेगा बशर्ते की वो बनी शानदार हो। मैंने चाय का एक घूँट भरा, वाकई मज़ा आ गया। लगा तन में जैसे नयी जान आ गयी हो। स्टाल के मालिक भैरू जी ने बताया कि वे 10 साल से ये स्टाल चला रहे हैं। वे सुबह 9 बजे से रात 8 बजे तक चाय पिलाते हैं। भैरूं जी वैसे फ़तेह नगर के रहने वाले हैं और व्यापर के सिलसिले में फिलहाल यही रहते हैं। तो दोस्तों 5 रुपये में एक कप बढ़िया चाय कुछ बुरा सौदा नहीं है।

 

शंकर मद्रासी डोसा सेण्टर

चलिए अब हम आपको ले चलते हैं सरदारपुरा रोड की तरफ। इस रोड की साइड में आपको मिलेंगे शिवलाल जी जो पिछले 8 साल से ये स्टाल चला रहे हैं। जैसा की नाम से पता चलता है वे साउथ इंडियन डिशेस का स्टाल लगाते हैं। यहाँ मसाला डोसा 30 रुपये व इडली (2 पीस) केवल 20 रुपये में मिल जाती है। 20 से 30 रुपये में अगर पेट भरता है तो मेरे हिसाब से ये बेस्ट डील है। शिवलाल जी इडली, डोसा बनाने से लेकर परोसने तक साफ़ सफाई का खासा ध्यान रखते हैं। साउथ इंडियन फ़ूड का स्टाल उदयपुर में बहुत कम ही देखने को मिलता है।

 

जय श्री भैरूं भवानी चायनीस

यहाँ पहुचते ही सबसे पहले मुझे मेनू कार्ड थमा दिया गया। सच बताऊँ तो मेनू में 21 आइटम लिखे थे। मैंने तुरंत पूछा क्या सब मिलेगा? तो सामने से जवाब आया 17 – 18 तो आइटम तो मिल ही जायेंगे। हैं न ग़ज़ब की बात। एक छोटे से स्टाल पर 17 – 18 वैराइटी एक साथ मिलना। ये हैं गोगुन्दा के रहने वाले निर्भय जी जो चायनीस खाने में महारथ हासिल रखते हैं। ये पिछले 5 साल से RMV स्कूल (गुलाब बाग रोड) के बाहर चायनीस खाने की स्टाल लगा रहे हैं। मंचूरियन, पनीर चिल्ली से ले कर सूप तक मिलता है। और रेट हैं 15 रुपये से लेकर 45 रुपये तक। निर्भय जी की स्टाल पर ज़्यादातर आने वाले लोग स्कूल व कॉलेज के बच्चें ही है।

 

अमेरिकन भुट्टा

बैंक तिराहा बापू बाज़ार में मिलने वाले अमेरिकन भुट्टे से उदयपुर का कौन शख्स वाकिफ नहीं है? इस स्टाल के ओनर शंकर जी पिछले 10 सालों से भी ज्यादा से ये स्टाल लगा रहे हैं। सुबह 11 बजे से कच्चे भुट्टे और फिर शाम 5 बजे से भुट्टे से बनी अलग अलग चीज़ें बेचते हैं जिनमे बॉयल्ड भुट्टा, स्वीट कॉर्न, चीज़ कॉर्न, कॉर्न चाट और राब शामिल है। शंकर जी ने बताया की मॉल में मिलने वाले कॉर्न में अधिकतर फ्रोजेन कॉर्न इस्तेमाल किया जाता है जबकि वे सब कुछ फ्रेश भुट्टे से बनाते हैं। अमूल बटर का इस्तेमाल करते हैं यानि की सेहत से किसी भी तरह का खिलवाड़ नहीं किया जाता। पूछने पर बताया की ज़्यादातर भुट्टा वे गुजरात व महाराष्ट्र से मंगाते हैं। इनके यहाँ मिलने वाले प्रोडक्ट्स 10 से 40 रुपये तक के हैं व सभी वर्ग के ग्राहक इनके यहाँ आते हैं।

 

सांवरिया चाट सेण्टर

TRI ऑफिस के बाहर अशोक नगर मेन रोड पर श्री रोहित साहू जी सांवरिया चाट सेण्टर नामक स्टाल लगाते हैं। चटपटी चाट का मज़ा आप शाम 5 बजे से ले सकते हैं। अक्सर इनके स्टाल पर भीड़ भाड़ दिखाई देती है। यहाँ मिलने वाली चाट में सूजी के पतासो से बनी पानी पूरी, आलू टिक्की, भेलपुरी व दही पूरी शामिल है। पानी पूरी के लिए ख़ास हींग व जीरे का झोल बनाते हैं। व आलू की टिकिया शुद्ध देसी घी में पकाते हैं। रोहित जी पिछले 8 सालो से उदयपुर के लोगो को चाट के चटखारे लगवा रहे हैं। रोहित जी गंगापुर भीलवाडा के रहने वाले हैं।

 

बॉम्बे पाव भाजी

100 फिट तिराहा यूनिवर्सिटी रोड पर नाथूलाल जी की पाव भाजी की स्टाल है। इनके हाथ की पाव भाजी वाकई लाजवाब है। दोपहर 3 बजे से लेकर रात 10 बजे तक आप यहाँ पाव भाजी और दाबेली का लुत्फ़ उठा सकते हैं। पिछले 2 – 3 महीनो से उन्होंने कश्मीरी पुलाव भी अपने मेनू में शामिल कर लिया है। बटर पाव भाजी 40 रुपये व सादा पाव भाजी 30 रुपये में उपलब्ध है। फ़तेह नगर के रहने वाले नाथू जी पिछले 4 वर्षों से स्वादिष्ट पाव भाजी खिला कर उदयपुर के लोगों के दिलों में अपनी विशेष जगह बनाने में जी जान से जुटे हुए हैं।

 

 

पंडित जी के आलू बड़े

फ़तेह स्कूल के बाहर एग्रीकल्चर यूनिवर्सिटी के सामने आलू बड़े का स्टाल चलाने वाले प्रह्लाद शर्मा जी से शायद ही कोई उदयपुर वासी नावाकिफ हो। खैर मेरी उनसे मुलाक़ात का पहला मौका था। जब भी वहां से गुज़रता था हमेशा उनके स्टाल के बाहर भीड़ नज़र आती थी। आज भी यही हाल था। मेरे सामने शर्मा जी ने करीब 50 आलू बड़े कढ़ाई से निकले। सिर्फ 3 मिनट के अन्दर सब साफ़ हो गए। वे फिर से आलू बड़े की दूसरी खेप निकलने में लग गए। शर्मा जी सन 1994 से यहाँ के निवासियों को चाव से आलू बड़े खिला रहे हैं। यदि आपको इनके हाथ के आलू बड़े चखने हैं तो आप दोपहर 12 से शाम 6 बजे तक इनके स्टाल पर पधार सकते हैं। वैसे शर्मा जी नागदा रतलाम से ताल्लुक रखते हैं।
